Cranberry blondies

These festive blondies make a great treat for the whole family.
250g white chocolate
250g butter
150g dried cranberries
100g plain flour
1 tsp baking powder
280g caster sugar
5 eggs
Fresh cream, whipped to serve (optional)
Preheat the oven to 180°C / 350°F / Gas mark 4.
Line a baking tray with greaseproof paper and set aside.
Break up the pieces of chocolate and butter and add to a heatproof bowl.
Slowly melt the chocolate and butter in the bowl over a pan of gently simmering water until melted.
Sift the baking powder and flour into a separate bowl and mix in the sugar.
Pour in the melted chocolate mixture and combine until smooth.
Whisk the eggs in a small bowl then add to the mixture. Mix well then add in the cranberries.
Pour the mixture into the baking tray and bake for 20-25 minutes.
Leave to cool for an hour or so before cutting into brownie slices and serve with a dollop of whipped cream if you like.
