Crisped rice pinwheel
Delicious crisped rice roll with strawberry buttercream icing which kids and grown ups alike will love.

3 tbsp butter

160g mini marshmallows

Pinch of salt

165g crisped rice cereal

Strawberry buttercream icing

140g butter

280g icing sugar, sifted

2 tbsp milk

5 tsp strawberry jam

Grease and line a baking sheet.

Melt butter and marshmallows.

Stir the melted mix into the cereal.

Press the cereal into the tin and allow to cool for 15 minutes.

To make the buttercream icing, beat the butter, icing sugar, milk and strawberry jam together.

Spread a thin layer of the icing over the crisped rice base, leaving a 1 inch gap at the sides a sicing will spread out slightly.

Gently roll it up into a scroll, starting at one end and rolling it over on itself.

Slice with a sharp knife and serve.
