Everyone loves a good chili. A bit of heat on cold days is a warm welcome and can be dressed up for a dinner or served as a cosy lunchtime meal.
500g beef mince
1 large onion, diced
4 cloves of garlic, crushed
1 tbsp olive oil
1 tsp dried chilli powder (or to taste)
2 tbsp tomato paste
1 tin whole peeled tomatoes
1 tin kidney beans, drained
2 tsp dried oregano
1 tsp cumin
250ml of beef stock
Cheddar cheese garnish (optional)
In a pan, heat the olive oil and seal the beef before adding the onion, chilli and garlic then cook until well browned.
Stir through tomatoes, tomato paste and beef stock.
Simmer for 20 minutes.
Add the beans, oregano and cumin, cooking for a further 5 minutes.
Season with salt and pepper, and top with cheddar cheese if using as a garnish.
Serve warm.
