Festive tortilla

Tortillas filled with Christmas leftovers make for a decadent dish.
2 tbsp olive oil
1 onion, chopped
100g leftover brussels sprouts, shredded
4-8 leftover cooked sausages
300g leftover roast or boiled potatoes, diced
6 large eggs
Tomato or brown sauce, to serve
Heat the olive oil in a medium non-stick, oven safe frying pan.
Add the onion and fry for 5 minutes, to soften.
Add the sprouts, sausages and potatoes and cook over a high heat.
Meanwhile, in a large bowl beat the eggs with salt and pepper.
Heat the grill.
Pour in the egg mixture and leave to cook undisturbed over a low heat for 8 minutes until firmly set underneath but not on top.
Put under the grill for a few minutes until the top is set and just golden (if you don’t have a pan that’s suitable, then carefully slide the tortilla out of the pan onto a baking sheet instead to grill).
