Feta cheese salad

The sweetness of the roasted veg goes perfectly with the saltiness of the feta cheese.
1 courgette, cut
1 red pepper, cut
3 tomatoes, cut
Handful black olives
2 tbsp olive oil
Pinch salt
1 red onion, cut
Handful iceberg lettuce leaves
150g feta cheese
Preheat the oven to 180°C/350°F/gas mark 4. Line a baking tray with parchment paper.
Make sure your courgette, peppers and tomatoes are roughly cut into big chunks.
Place your vegetables, olives and onion onto the baking tray, coat with the oil and season with the salt.
Place in the oven for 30 minutes until vegetables are soft.
When cooked spoon the roasted vegetables onto four clean plates, add your feta cheese on top and garnish with the lettuce leaves.
