French breakfast muffins

These French breakfast muffins are delicious and are perfect for a late bekkie.
240g flour
130g sugar
2 tsp baking powder
Pinch salt
1/4 tsp cinnamon
1 large egg
240ml milk, plus extra
6 tbsp butter, unsalted
1 tsp vanilla essence
20g brown sugar
Preheat the oven to 190°C or gas mark 5. Place muffin cups into a 12 cup muffin tin.
Gently melt the butter in a small pan on a medium heat. Remove and set aside.
Combine the flour, sugar, baking powder and salt together in a large bowl. You can use a blender if you have one.
In a separate bowl beat the egg with the milk and the melted butter. Add the wet mix to the dry ingredients. Spoon in the vanilla essence and mix the ingredients together.
Divide the batter evenly between the muffin cups. Don’t fill them up all the way to the top as they will rise in the oven.
Place in the centre of the oven for 25 minutes. When a knife comes out clean they are done.
While they are still hot sprinkle a little of the brown sugar on top before serving.
