German apple cake

This delicious apple tart is a lovely twist on the traditional one we all know and love.
1 tsp butter for greasing
2 eggs
170ml olive oil
300g caster sugar
350g flour
2 tsp cinnamon
1 tsp baking soda
Pinch salt
5 large cooking apples, peeled and sliced
Handful of chopped almonds
Preheat the oven to 180°C/ 350°F/ gas mark 4. Grease a 9 inch cake tin with butter.
Beat the eggs with the oil until creamy. You can use a hand blender if you want.
In another bowl combine the sugar, flour, cinnamon, baking soda and salt together.
Mix until well combined.
Pour into the egg and oil mix.
Add the apple slices to the batter. Fold into the mixture.
Pour into your prepared cake tin and place in the oven for 50 minutes, until golden.
Sprinkle the chopped almonds on top before serving.
