Gluten free avocado brownies

These amazing gooey brownies are gluten free and guilt free.
2 large ripe avocados, stones removed and mashed well
180g dark chocolate, melted
190g granulated sugar
2 large eggs
1 tsp vanilla extract
75g gluten free flour
30g unsweetened cocoa powder
½ tsp gluten free baking powder
¼ tsp salt
3 tbsp vegetable oil
110g dark chocolate, chopped
Preheat the oven to 180°C / 350°F / Gas mark 4.
Line a baking tray with greaseproof paper and set aside.
In a large bowl, mix the mashed avocado and melt the dark chocolate.
Whisk in the sugar until well combined, then add in the eggs and vanilla extract.
Mix well. Add in the flour, cocoa, baking powder and salt, mixing with a large spoon until just combined, do not over mix.
Stir in the vegetable oil until it's well distributed and the batter is smooth.
Stir in the chopped chocolate, then pour the batter in the baking tray.
Bake for 25-30 minutes, or until the middle is set.
Remove and let cool completely before serving.
Dust with sugar if desired.
