Gluten-free stuffing

Have your Christmas stuffing gluten free.
1 tbsp olive oil
2 sticks celery, chopped fairly small
50g sundried tomatoes
400g tinned chickpeas, drained
250g tinned chestnuts
210ml Sherry
Salt, to season
Pepper, to season
Preheat the oven to 180°C / 350°F / Gas mark 4.
Line a baking tray with greaseproof paper and set aside.
In a small pan heat the oil and fry the celery on a low heat for 4-5 minutes or until it becomes slightly soft but still has some crunch.
Put the kettle on then soak the tomatoes in the boiling water for 10-15 minutes then chop small.
Purée the chickpeas with the chestnuts and sherry in a food processor. The texture is up to preference.
Add the celery and tomatoes, season to taste and make into balls and cook for 20 minutes and golden.
Alternately, you can stuff the turkey with the uncooked mixture and cook turkey according to its weight and instructions.
