Goat's cheese and fig open sandwiches
Creamy goat’s cheese and fig are a match made in heaven, these open toasted sandwiches are lovely to look at and won’t last long.
 

1 crusty baguette, cut into small round thick slices

200g goat's cheese, crumbled

8 figs, sliced vertically

Walnuts, to garnish (optional)

Honey, for drizzling (optional)

Pre-heat the grill to hot.

Layer the goat's cheese on top of the slices of bread.

Grill until the cheese starts to turn a golden colour at the edges.

Remove from the grill and top with the fig slices.

Season the figs with a little salt and pepper then return to the grill for a further 1-2 minutes until the figs start to soften and warm through.

Top with a walnut or two and drizzle with a little honey if you like.

Serve immediately.
