Homemade fish fingers with sweet potato cubes

400g salmon fillets

Zest of 1 lemon

1 teaspoon dried mixed herbs

2 sweet potatoes (about 500g), peeled and cut into small cubes

1 tablespoon olive oil

1 white potato (about 250g)

1 tablespoon milk

3 tablespoons plain flour

1 medium egg, beaten

80g breadcrumbs

200g basics frozen garden peas

Preheat the oven to 180ºC/ gas 6. Transfer the salmon, lemon zest, mixed herbs and sweet potato cubes to a baking tray. Toss with olive oil and mix well. Cook in the oven for 15 minutes, then take out the salmon and return the tray to the oven to cook for another 20 minutes.

In the meantime, boil the potato to the boil in a pan of water and simmer and simmer for 10 minutes, until soft. Drain and mash.

Heat the grill to a medium high heat. Break the salmon up into pieces and mix in with the mash. Make into 12 fish fingers. Dip each finger into the flour, followed by the beaten egg and finally the breadcrumbs.

Pop the fish fingers on a tray and grill for 10 minutes, until the breadcrumbs start to turn golden.

Meanwhile, boil the peas 3-4 minutes. Serve with the fish fingers and sweet potato cubes.
