Honey glazed carrots

Honey glazed carrots
These carrots are a perfect accompaniment to a roast beef or roast chicken dinner. They are full of flavour and the whole family is sure to devour them in minutes. 
 

2 tbsp butter

200g baby carrots, you can use large carrots and simply cut them lengthways

250ml vegetable stock

2 tablespoons honey

Salt and pepper

Fresh rosemary to garnish

Add the butter into a saucepan and melt over a medium temperature.

Add the carrots and gently cook for about 2 minutes before pouring in the stock.

Bring it to the boil before reducing the temperature and allowing it to simmer for about 5 minutes or until most of the stock is gone. 

Add the honey to the pot and heat for another 5 minutes.

Drain away any excess liquid and season with salt and pepper.

Garnish with the rosemary before serving.
