Lamb with apricots

A Middle Eastern tagine served with couscous and herbs.
4 tbsp olive oil
500g stewing lamb pieces
2 onions, thinly sliced
2 garlic clove, chopped
2 tbsp chopped ginger
¼ tsp ground cumin
¼ tsp allspice
¼ tsp paprika
2 tbsp tomato purée
10 soft dried apricots, halved
600ml vegetable or chicken stock
Cooked couscous, fresh mint leaves, and lemon wedges, to serve
In a medium-sized pan, heat 1 tablespoon of the oil.
Season the meat with salt and pepper then fry quickly until browned but not overly cooked.
Remove from the pan and add the remaining oil.
Add the onion, garlic and ginger.
Cook for 5 minutes until soft, then add the spices, tomato purée, apricots and stock, and return the lamb to the pan.
Simmer gently for 25 minutes.Season to taste if needed.
Serve with couscous, mint or coriander leaves, and lemon wedges.
