Lamb with lentils casserole

This slow cooked recipe ensures your lamb is deliciously tender.
4 lamb shanks
1 tbsp olive oil
1 onion, diced
2 cloves garlic, crushed
2 carrots, diced
400g tin brown lentils
400g chopped tomatoes
750ml beef stock
Remove the lamb from the bone and cut into bite sized pieces.
In a casserole dish, brown the meat in the oil on a high heat. Set aside.
Lower the heat before adding in the onions, garlic and carrots. Cook for 4 minutes.
Drain the lentils and add them to the saucepan.
Return the lamb to the pot and add the tomatoes and stock.
Bring to the boil and allow to simmer for 2 hours, top up with water if needed.
