Luxury chocolate and raspberry tart
This is absolutely delicious. Instead of raspberries you could use very ripe apricots, or a puree of semi dried apricots. cooked according to instructions on pack
 

1 x 340g pack Jus-Rol All butter puff pastry thawed

225g fresh raspberries

250g good plain chocolate At least 70% solids

250ml double cream

Icing sugar for dredging

Preheat oven to 180ºC/160ºC for fan assisted/350ºF / Gas Mark 4

Roll out pastry to line a 23cm/9" flan tin and bake blind. Once cooked allow to cool.

When flan is cooled, gently bring cream to the boil, remove from heat and stir in the chocolate, gently stirring in one direction until it has formed a glossy dark mixture. Allow to cool for a few minutes, meanwhile scatter the raspberries over the base of the flan case.

Gently pour the chocolate mixture over the raspberries, shaking the flan gently to allow it to level, then leave in a cool place to set up. (You can chill the flan but it is best eaten cooled but not too cold)

Serve with crème fraiche and dredged with icing sugar if desired.

This recipe can also be made with Jus-Rol Shortcrust Pastry OR Jus-Rol All Butter Shortcrust Pastry (1 x 500g block of either). If using Shortcrust Pastry, please adjust the oven temperature above to 200ºC/180ºC for fan assisted/ 400ºF / Gas Mark 6
