Nutella Christmas yule log
A delicious Christmas dessert that the kids will love.

For the biscuit

4 eggs, separated

125g sugar

50g butter, melted

100g flour, sieved

25g cocoa powder

1 tsp vanilla extract

For the filling

150g Nutella

500ml cream, very cold

200g mascarpone, very cold

100g chopped hazelnuts

For the syrup

100g sugar

100ml water

Put a large mixing bowl in a freezer or fridge. Preheat the oven to 180°C/350°F/Gas 5.

Beat the egg yolks with the sugar until pale. Add the melted butter and vanilla extract and mix. Add the flour and combine well. Whip the egg whites until stiff and add to the mixture. Spread over a lined rectangular baking tray and bake for 10 minutes.

Meanwhile, make the syrup. Add the sugar and water to a saucepan and bring to a boil. When the biscuit is cooked, spread the syrup evenly on it and let cool completely. 

Beat the cream, mascarpone and Nutella in the cold mixing bowl. Spread about ⅔ of the filling and scatter the chopped hazelnuts. Roll the log and spread the rest of the filling all over. Decorate with more chopped hazelnuts and chocolate balls.
