Orange cake
This orange cake is delicious. If you like, you can substitute the fruit for another like lemon or even apple.

100g butter, plus extra for greasing

100g caster sugar

125g plain flour

2 eggs

Zest of 2 oranges, cut some slices for garnishing

2 tsp orange juice

1 tsp baking powder

100g icing sugar

Fresh mint leaves for garnishing

Preheat the oven to 180°C / 350°F / Gas Mark 4. Lightly grease a 9 inch cake tin with butter.

Combine the butter and caster sugar together until smooth. Add the flour and eggs. Use a blender to combine the ingredients together.

When blended add the orange zest and orange juice until fluffy.

Spoon into the cake tin and bake in the oven for 40 minutes or until a skewer inserted into the middle comes out clean. 

Allow to cool before removing from tin.

Transfer to a wire rack and lightly dust with icing sugar.

Top with the orange slices and mint leaves before serving.
