Paneer skewers, tandoori style with fruity salsa
A fast vegetarian perfect for a weekend when you want to serve something different to the kids.
 

150g natural yoghurt

3 tbsp tandoori paste

4 limes, 3 juiced, 1 cut into wedges

2 x 225g paneer cheese, cut into 3cm pieces

2 small red onions, cut into 1cm slices

1 red pepper, cut into 3cm pieces

For the salsa

1 mango, cut into small dice

1 avocado, cut into small dice

20g mint, chopped

500g cooked basmati rice, to serve (optional)

Heat grill to high.

Line a baking tray with kitchen foil.

Mix the yoghurt in a medium bowl with the tandoori paste, 1 tablespoon of lime juice and some salt and pepper.

Add the paneer and coat thoroughly.

Thread the paneer onto metal skewers alternating with pepper and onion, then place on the baking tray.

Grill the skewers for 10 minutes, turning halfway through, until the paneer is hot and the vegetables are soft and lightly charred.

Make the salsa by mixing the mango, avocado, mint and remaining lime juice.

Serve the skewers, salsa and lemon wedges along with the rice if you like.
