Parsnip gratin
If you aren't a fan of parsnips why not try this lovely recipe. The cauliflower and cheese make it particularly tasty and filling.

1 tbsp butter , plus extra for greasing

4 large parsnips, peeled

½ onion, finely chopped

1 head cauliflower, chopped

240ml full fat milk

1 tbsp all-purpose flour)

Salt and freshly ground black pepper to season

1 tbsp mixed herbs – thyme, basil or parsley

1 egg

120g Mozzarella cheese

Preheat the oven to 220°C / 425°F / Gas Mark 7. Grease an ovenproof dish with a little butter.

Cut the parsnips into thin slices and lay down a layer onto the bottom of the ovenproof dish. Don’t use all the slices.

In a saucepan, melt the butter and cook the onion for about 5 minutes.

In a food processor, blend the cauliflower, milk and flour together. Season with the salt and pepper.

Add the egg and onion and process for another minute.

Spoon some of the cauliflower mix onto the parsnip and layer on more parsnips. Repeat until all the parsnips and cauliflower mix is used finishing with the parsnips on top.

Sprinkle on the cheese and the herbs before placing in the oven for 45 minutes.

Allow to cool for about 5 minutes before serving.
