Mini desserts well loved by most and ideal for gatherings.
4 egg whites
190g castor sugar
1 punnet strawberries, halved
2 bananas, peeled and sliced
2 kiwifruit, peeled and sliced
2 mandarin, peeled and segmented
300ml cream, whipped
Preheat the oven to 150°C / 300°F / Gas mark 2.
Line a baking tray with greaseproof paper and set aside.
Whip the egg whites until soft peaks appear and then whip the sugar in gradually until it's dissolved and the mixture is peaked.
Place large spoonfuls of the mix on the baking tray and bake for 20 minutes.
Turn off the oven and leaving the oven door open, leave the meringues to cool completely.
Add a dollop of cream on top of the cooled meringues then add a piece of each fruit on top and serve.
