Red cabbage salad with bacon

Introduce your kiddies to the Irish tradition of cabbage and bacon but with a modern twist.
1 small head red cabbage
8 slices bacon
3 tsp olive oil
50g onion, diced
3 tsp sherry vinegar
Pinch of salt
1 tsp fresh ground black pepper
Quarter your cabbage, cut away the core and slice cabbage into thin strips and put into large bowl. Set aside.
Pour 1 teaspoon of olive oil into a frying pan and gently cook your bacon on a medium heat until it is crisp, about 6 minutes turning half way. Remove, dice and set aside.
Add the rest of your olive oil to the pan and sauté your onions. Combine your vinegar and allow to simmer for about half a minute.
Add your cabbage and cook for a further 3 minutes.
Return your bacon to the pan and season with your salt and pepper. Stir to ensure the cabbage and bacon are coated with the sauce.
