Roast chestnut puree

This puree goes well in cakes and in baking or even spread over toast.
20 roasted chestnuts (peeled)
190g granulated sugar
475ml water
1 tbsp vanilla
In a saucepan, combine nuts, sugar and water and bring to a boil.
Reduce the heat to medium-low and simmer for 25-35 minutes until the majority of the liquid is evaporated.
Remove from heat and add the vanilla.
Strain the chestnuts, reserving the sugar syrup and transfer to a food processor and blend until smooth.
Add syrup slowly until desired consistency is obtained.
Allow to cool before refrigerating.
