Rosemary with apple toad in the hole
A classic dish with a herb and fruit spin tucked in a comforting doughy bed.
 

2 tbsp vegetable oil

2 red skinned apples, washed, cored and cut into wedges

8 pork and leek sausages

Few sprigs of fresh rosemary

100g plain flour

2 large eggs

150ml half fat milk

Preheat the oven to 200°C / 400°F / Gas mark 6.

Place the oil in a large roasting tin and place in the oven.

Remove the hot roasting tin from the oven, add the sausages, apple wedges and rosemary and cook for 10 minutes or until beginning to brown.

Meanwhile, place the flour in a bowl with the salt. Make a well in the centre and break in the eggs.

Gradually whisk in the milk and 150ml of water until the mixture is smooth then set aside.

Remove the roasting tin from the oven and shake carefully. 

Pour over the batter and return to the oven to bake for 30-35 minutes or until golden and risen.
