Rustic olives, with fennel and orange zest
Jars of delightful savoury olives with a twist and couldn’t be easier.
 

380g assorted brined olives

60ml extra-virgin olive oil, plus more for filling jars

¼ tsp crushed red-pepper flakes

½ tsp fennel seeds

2 bay leaves

Four strips orange zest

2 tbsp white-wine vinegar

Combine all of the ingredients in a large bowl.

Transfer to jars.

Fill jars with remaining oil.

Refrigerate immediately for at least 8 hours and up to 2 weeks.

Wrap with decorative ribbons to make lovely gifts.
