Salmon with linguini and tomato sauce with herbs

This is a lovely combination, packed with flavour and healthy ingredients. A certain menu addition.
4 Salmon darnes
1 Lemon
6 Vine ripened tomatoes, cut into halves, seeds removed
2 tbsp of olive oil
Fresh basil leaves, reserve some for garnish (optional)
2 Cloves of garlic, sliced finely
300g dried linguini
1 Small deli container of Kalamata olives, pitted and sliced in half (optional)
Fresh thyme, for garnish (optional)
Preheat the oven to 180°C / 350°F / Gas mark 4.
Line a baking tray with greaseproof paper and set aside.
Place each of the salmon darnes in kitchen foil and give a gentle squeeze of lemon juice on top of each one. Then close up the foil so they are closed, making a parcel.
Cut the seeded, halved tomatoes further into smaller pieces.
In a large frying pan heat the olive oil and cook the garlic gently until tender, then add in the olives if using and the tomatoes and roughly tear in the basil.
Let this simmer for 15 minutes.
Place the wrapped salmon darnes onto the baking tray and cook for 20 minutes.
Cook the pasta according to the instructions on the packet, drain and set aside.
Mix the pasta sauce in with the drained pasta and serve with the salmon darne on the top.
Garnish with a fresh thyme if using.
