Scrambled eggs and smoked salmon on soda toast

A decadent breakfast or brunch dish.
40g butter, plus a little extra for spreading
6 eggs
2 tblsp cream
2 slices brown soda bread, griddled or toasted
salt and pepper
4 slices smoked salmon
1 lemon, quartered
Handful of chives
Melt the butter in a non stick frying pan.
Add the eggs and cream with a pinch of salt and pepper to a bowl and whisk together.
Add to the butter in the frying pan.
Using a wooden or plastic spatula mix through the eggs constantly
Continue cooking until desired consistancy is reached.
Toast the soda bread.
Add a scrape of butter and lay them out on serving plates.
Place the salmon on top with the chives scattered on top.
Serve with lemon on the side.
