Simple Pizza Dough
This pizza dough is fun to make, especially with the children to help and makes 3 pizzas.

300g all-purpose flour (plus extra for the mash process, below)
7g sachet dried yeast
1 tbsp caster sugar
1 tsp salt
2 tbsp olive oil
235ml warm water
2 small potatoes, skins removed, cooked then mashed

Preheat the oven to 200°C / 400°F / Gas mark 6.

Line 3 baking trays with greaseproof paper and set aside.

Add all the dry ingredients to a large mixing bowl.

Pour over the oil and water.

Mix together to form a rough dough.

Turn it onto a floured surface.

Knead for a minute then add in half of the potato.

You will need to sprinkle over some extra flour as you go, as the potato makes it pretty gloopy.

Continue adding mash and the extra flour.

Knead for about 5-7 minutes.

Eventually you will have added enough extra flour in to get the mix back to being a smooth dough.

Don’t worry if it takes some time to take this from a slimy mixture to a proper dough consistency.

It does work. (This is the time for the kids to help)

Place the dough into an oiled bowl, cover with a tea towel and leave somewhere warm to double in size.

Roughly 30-40 minutes.

Punch out the air, divide and roll out into 3 pizzas and top with whatever toppings your family enjoy.

Cook in the oven for 15-20 minutes, checking it doesn’t burn.
