Simple tuna pasta

A fast fsmily meal to make using tinned tuna and a cream sauce.
1 packet of penne or bow tie pasta, cooked
1 large tin of tuna in spring water, drained
1 onion, diced
2 sticks of celery, chopped finely
1 tsp of butter
3 tbsp of plain flour
1 tin of corn, drained
60g of butter
475 ml of low fat milk
1 chicken stock pot or cube
3 tbsp of parmesan cheese, grated
Vegetable oil (for greasing baking dish)
Preheat the oven to 160°C / 325°F / Gas mark 3.
Grease a baking dish with a small amount of vegetable oil on kitchen paper and set aside.
In a large frying pan, heat the teaspoon of butter and cook the celery and onion until they become translucent. Once this is done, empty these vegetables into a bowl.
Using the same pan, heat up the 60g of butter now and add the flour and cook until it starts to brown but not burn, stirring gently. Add in the milk and the stock cube or pot and stir until smooth.
Add the tuna, corn, onion and celery mixture into the sauce and cook for 1-2 minutes, stirring.
Add the drained pasta and mix until everything is coated in the sauce.
Transfer into the baking dish, top with the parmesan cheese and bake until the cheese is melted or golden. (About 5 minutes.)
Ready to serve.
