Spaghetti with charred tomato sauce

This quick, tasty dish is perfect for mid-week family dinner.
400g cherry tomatoes
1 red onion, thiny sliced
2 tbsp olive oil
2 tbsp balsamic vinegar
1 tbsp brown sugar
375g dried spaghetti
60g feta, crumbled
Handful fresh basil to serve
Heat a griddle pan over a medium heat.
Combine tomatoes, onin and 1 tbsp olive oil in a bowl, then transfer to the hot pan.
Turning tomatoes, for 5 minutes until blistered and blackened.
Transfer to a heatproof bowl.
Add vinegar and sugar to tomatoes, toss gently to combine. Cover and set aside for 5 minutes.
Meanwhile, cook pasta in a saucepan of boiling, salted water for around 8 minutes or until tender.
Drain, reserving 3 tbsp of the cooking liquid.
Return pasta to pan. Add tomato mixture and reserved cooking liquid.
Toss over a low heat for 2 minutes or until heated through.
Serve sprinkled with feta and basil and drizzle with remaining oil.
