Spiced lamb burritos

Burritos are a huge hit with kids in that they can make their own up with all of the beautiful ingredients in front of them.
3 tsp olive oil
1 small onion, finely chopped
2 cloves fresh garlic, crushed
400g lamb mince
198g tin sweetcorn, drained
2 tbsp Tex Mex spice
2 tbsp fresh coriander, finely chopped, plus extra to garnish
125g natural low-fat yoghurt
2 tbsp fresh mint, finely chopped
4 large tortillas
1 cucumber, chopped
2 small tomatoes, chopped
1 handful coriander
Preheat the oven to 180°C / 350°F / Gas mark 4.
In a large frying pan, heat the oil over medium heat.
Cook the onion and garlic, stirring, for 3–4 minutes or until soft.
Add the lamb and corn and cook, stirring, until lightly browned.
Add the Tex Mex spice and 120ml of water.
Cook, stirring, until thickened about 5 minutes.
Remove from the heat and stir in chopped coriander. In a small bowl, mix in the yoghurt and mint.
Tear a large sheet of foil and place the tortillas inside and wrap loosely.
Heat the tortillas in the oven for 5-7 minutes then allow to cool slightly.
Serve either in different bowls and plates, allowing everyone to help themselves or divide the lamb mixture among the tortillas and top with cucumber, tomato, coriander, extra coriander leaves and mint yogurt and roll up.
