Spicy chorizo and prawn fried rice

A lovely fried rice dish and a great way to get extra vegetables into a meal.
250g basmati rice
125g frozen peas
2 tbsp sunflower oil
1 egg, beaten
100g finely diced chorizo
1 garlic clove, chopped
4 spring onions, sliced on an angle
1 red pepper, deseeded and chopped
Good pinch five spice powder
1-2 tsp soy sauce
200g frozen cooked prawns, thawed and rinsed
Cook the rice according to the instructions adding the peas in during the last 2 minutes.
Drain and set aside.
Heat half the oil in a wok or large pan.
Pour in the egg, swirl around and let it set.
Break it up vigorously using a spatula or chopsticks if you have them.
Set aside on a plate.
Wipe the pan with kitchen paper, then heat the remaining oil.
Toss in the meat, garlic, spring onions and pepper, and stir-fry until the pepper starts to soften.
Add the five-spice, rice, peas and soy sauce, then stir-fry for 5 minutes more stirring.
Finally add the egg and prawns, and stir-fry to heat through.
