Spicy Mexican bean salad

This instant meal is fast, delicious and works well on its own or alongside other small dishes.
3 x 400g tins, mixed drained beans
4 spring onions onion, finely chopped
Small bunch coriander, chopped
6 tbsp olive oil
1 garlic clove, mashed to a paste
2 tbsp white wine vinegar
50g cheddar cheese, grated
Tortilla chips, to serve
Mix the beans, onion and coriander together. In a bowl, combine the olive oil and the garlic paste and mix well.
Add the vinegar, salt and pepper and pour over the bean mixture. Sprinkle over the cheese.
Serve with tortilla chips.
