Spicy Mexican potatoes

Have your potatoes differently, these spiced potatoes with dip makes for an indulgent savoury treat.
800g potatoes, cut into chunky wedges
1 tbsp olive oil
1 onion, finely chopped
1 garlic clove, finely chopped
½ tsp mild chilli powder
½ tsp paprika
1 tsp cumin
½ tsp cayenne pepper
A few chives, chopped to servbe
Soured cream, to serve
Boil the potatoes for 5 minutes. In a large frying pan over medium heat, add the oil and fry the onion for 8 minutes.
Add the garlic and spices, then fry for 2 minutes more.
Drain the potatoes and tip into the onion pan.
Turn up the heat and mix the potatoes around so that they are all covered.
Cook for 10 minutes more until tender, then serve with soured cream, sprinkled chives and with a little cayenne.
