Spring onion cakes

Crisp, fresh and light make these unusual savoury cakes.
125g all-purpose flour
5 spring onions, cut on the diagonal into about 3·5cm pieces
Freshly ground black pepper
Vegetable oil for frying
Combine the flour and 200ml of cold water, adding the water a little at a time and mixing until the consistency is of pancake batter.
Add the spring onions and black pepper then mix well.
In a large frying pan or on a griddle, add vegetable oil to thinly coat the surface, about 1 tablespoon at a time.
Turn the heat to medium high.
Add the batter with a ladle or large spoon onto the frying pan in a circle.
Cook on one side until golden brown.
Flip and cook the other side.
Reduce the heat if needed and add more oil if required.
Remove the pancakes, to kitchen paper and repeat the process until the batter has been fully used.
Serve hot or cold.
