Stilton with cranberry toasties

Stilton with cranberry toasties
These are simple to make and absolutely a winner when entertaining.
 

8 slices white bread

2 tbsp softened butter

150g crumbled Stilton

4 spring onion, sliced

4 tbsp cranberry jelly, plus a little for serving

Butter both slices of the white bread slices

Mix the Stilton, spring onion and cranberry jelly in a bowl to combine well.

Divide the cheese mixture evenly on each portion to make sandwiches.

Fry these in batches in a non-stick griddle or frying pan for 3-4 mins on each side buttered side down.

Keep the heat low so the cheese melts slowly as the bread becomes golden and crunchy.

Serve warm with a little cranberry jelly on the side if you like.
