Stuffed avocado
This recipe is a great way to use up any leftover mashed potatoes. They are also a fun way to get your kids to eat fish. 

2 avocados, halved with pip removed

100g mashed potatoes

1 small tin salmon

4 tbsp mayonnaise

1 tomato, chopped

¼ spring onion, finely sliced

Salt and pepper to taste

Cut your avocados in half and remove the pip. Remove a little of the avocado and set aside.

In a large bowl, combine your mashed potato with the salmon, mayonnaise, tomato, spring onion and the removed avocado.

Season with the salt and pepper.  

Mash it all together.

Spoon the filling into each half of the avocado.

Season with salt and serve.
