Sweet potato baked crisps with thyme

These crisps are sweet, savoury and packed with flavour.
1 medium sweet potato washed thoroughly
2 tbsp olive oil
1 tsp orange zest
¼ tsp salt
Freshly ground pepper
1 tsp fresh thyme (or dried is fine)
Preheat the oven to 160°C / 325°F / Gas mark 3.
Line two baking trays with greaseproof paper and set aside.
Remove the outer tougher skin with a vegetable peeler.
Slice the sweet potato into very thin rounds.
In a bowl, mix the olive oil and zest. Using the 2 baking sheets, add half of the oil mixture and spread evenly.
Layer potato slices on the sheets and brush with remaining oil. Sprinkle with your seasoning and thyme.
Bake until the edges of the crisps curl up (around 10- 20 minutes) allow to cool then serve.
