Sweet potato cottage pie

Cottage pie is a real winter warmer but that doesn’t mean you can’t serve it during the summer. It is ideal for back to school time when the kids arrive home ravenous with hunger.
6 large sweet potatoes, chopped
113g butter, plus extra for greasing.
1 tbsp milk
1 onion, sliced
250g lean minced beef
4 large carrots, roughly chopped
200ml vegetable stock
Salt and pepper to season
Preheat the oven to 180°C / 350°F / Gas Mark 4. Lightly grease an ovenproof dish with butter.
Cook the potatoes in a saucepan of boiling water until soft. This will take around 20 minutes.
Drain away any excess water before adding the butter and milk. Mash it all together using a fork or potato masher. Season with salt and pepper.
In the meantime heat the oil in a frying pan and gently cook the onion until soft. Add your beef and cook until turning brown. Remove and spoon into your ovenproof dish.
Toss in your carrots and pour over your stock. Season with salt and pepper before layering on your potato mash.
Place in the oven for 30 minutes until the mash is golden.
Allow to cool before serving.
