Sweet potato muffins

Really moist, delicious muffins which are great for using up any extra cooked sweet potato.
2 eggs, beaten
200g caster sugar
120ml vegetable oil
225g sweet potato, mashed
80ml water
200g plain flour
1 tsp cinnamon
1 tsp bicarbonate
Icing
200g cream cheese
50g butter
100g icing sugar
2 tbsp maple syrup
Preheat oven to 180°C/350°F/Gas 4.
Line a 12 hole muffin tray with paper cases.
Beat together the eggs, caster sugar and vegetable oil. Add the sweet potato and water and mix well.
Sift in the plain flour, bicarbonate of soda and ground cinnamon, fold together gently.
Bake for about 25 minutes.
Remove from the oven and leave to cool.
Meanwhile, prepare the icing. Mix together the maple syrup, cream cheese, butter and icing sugar and using a handheld whisk beat together.
Spread the icing over the top of each muffin and serve.
