Tortellini and broccoli salad

This pasta saald can be eaten hot or cold and is great for a light dinner.
400g tortellini pasta
120 ml extra virgin olive oil
Half head of broccoli, cut into florets
Handful black olives
50g croutons, to garnish
60 ml lemon juice
Cook your tortellini according to packet instructions. Drain and set aside.
Coat with the oil and toss to ensure it is fully covered. .
In a separate pot, cook your broccoli until it is tender but not soft.
Spoon your tortellini into a bowl, add your broccoli and olives.
Garnish with you croutons before sprinkling your lemon juice over it.
