Turkey burgers with quick ‘cream’ sauce

These turkey burgers are a real crowd-pleaser that everyone will enjoy. They are also easy to make and pretty lean.
500g minced turkey meat
1 courgette, grated
1 bunch spring onion, chopped
1 egg beaten
Bunch mint, chopped
Bunch coriander, chopped
2 cloves garlic, peeled and crushed
Salt and pepper
Good pinch cayenne pepper
Olive oil
Preheat the oven to 200C / 400F / Gas Mark 6.
Mix all the ingredients for the burgers together, season well and shape into small patties – about 7cm across and 3cm thick. Place in the fridge to chill down.
Before cooking, drizzle them with olive oil and place them on a parchment-lined baking tray.
Bake for 30 minutes until starting to brown, turning them over once, about 20 minutes in, to brown both sides.
These are lovely served with a yoghurt / relish combo – you just mix Greek yoghurt with some chutney or even courgette or tomato relish.
