Vegetable bolognaise boost

This bolognaise disguises a lot of vegetables even though it does contain meat, we have used far less and focused on more vegetables without losing the delicious flavours of a classic dish kids love.
2 tbsp olive oil
2 onions, finely chopped
3 carrots, finely chopped
4 celery sticks, finely chopped
2 courgettes, cut into small cubes
4 garlic cloves, finely chopped
250g lean beef mince
1 heaped tbsp tomato purée
400g tin chopped tomatoes
1 x vegetable stock cube
400g pasta of choice
200g peas, frozen or fresh
25g parmesan or other cheese of choice, grated (optional when serving)
A few torn basil leaves, as garnish (optional)
In a large deep frying pan, heat the oil. Add the onions, carrots, celery, courgettes and garlic.
Cook until soft, about 10 minutes.
Turn up the heat and add the mince. Fry for a few minutes more, breaking up the mince.
Stir in tomato purée, pour over the chopped tomatoes and add a tin of water.
Crumble the stock cube in and simmer for 15 minutes until the sauce is thick, then taste for seasoning.
Cook the pasta according to the instructions, drain and add in with the sauce. Mix to coat well.
Tip the peas into the sauce and simmer for 2 minutes more until tender.
Scatter the basil and serve with a grating of cheese if desired.
