Vegetable samosas

Use up any leftover mashed potatoes in these easy to make samosas.
2 tbsp olive oil, plus extra for coating
1 onion, finely chopped
2 carrots, shredded
100g peas
4 mushrooms, cut
1 tsp mustard seeds
1 tsp garam masala
Pinch salt
250g leftover mashed potatoes
8 sheets filo pastry
1 tsp olive oil
Preheat oven to 180°C/350°F/gas mark 4. Line a baking tray with parchment paper.
Heat 1 tbsp olive oil in a large non-stick frying pan on a medium heat. Add the onion and cook for 3 minutes.
Stir in the carrots, peas, mushrooms, mustard seeds, garam masala and salt. Cook for 2 minutes before adding your mashed potatoes. Reduce the temperature.
Roll out the filo sheets onto a flat surface. Cut length ways and coat with the oil.
Spoon 1 tbsp of the potato mix into the centre, fold over to form a triangle. Repeat until all the filling is used up.
Place the samosas onto the baking tray and place in the oven for 30 minutes until brown.
