Wild rice salad

Wild rice salad
This wild rice salad can be served hot or cold. Add chicken pieces if you want or normal basmati rice, if you don't have wild rice.

300g dry wild rice

½ spring onion chopped

Handful pecans

1 red pepper, chopped

3 tbsp vegetable oil

1½ tbsp soy sauce

1 tbsp rice wine vinegar

Bag of mixed lettuce leaves

Handful minced parsley

Salt and pepper

Cook the rice according to packet instructions. Drain and leave to cool slightly.

Spoon your rice into a large bowl. Add the spring onion, pecans and red pepper. Toss in your lettuce leaves.

In a pouring jug, combine your oil, soy sauce, rice vinegar and parsley.

Pour over salad and stir well to combine.

Taste with salt and pepper.
