Red wine pasta

A delicious way to use leftover red wine!

500g linguine

1L water

1 bottle red wine

100g feta cheese

50g pine nuts

3 cloves garlic, crushed

1 tsp red pepper flakes

Salt and pepper

Fresh parsley

Olive oil

In a saucepan, combine the water and wine and a large pinch of salt. Bring to a boil.
Add the linguine and cook, stirring from time to time, until al dente. Drain the pasta, reserving 100ml of the cooking liquid.
In a frying pan, heat some olive oil. Add the garlic and red pepper flakes and cook over medium heat for 2 minutes. 
Add the reserved cooking liquid and bring to a simmer. Stir in the pasta, parsley, pine nuts, and toss. Season with salt and pepper and serve topped with feta cheese.
