5-minute coconut bites

These little bites are perfect for those after-school snacks.
240g desiccated coconut
200g pitted dates
Place 160g of coconut and all of the dates into a blender or food processor.
Process on high speed for 3-4 minutes, pausing to scrape down sides as needed.
Remove from processor and make small balls with your hands. When formed, roll the balls in the remaining coconut.
Put in lunch boxes and store in an airtight container for those post school snack cravings.
