Bacon with crispy potatoes

These make a great side dish or quick snack.
2 tbsp olive oil
4 rashers, finely chopped
4 potatoes, peeled and roughly sliced
Salt and pepper to taste
Cook the potatos in a pot of boiling water until tender.
Heat the oil in a pan on a medium heat and add the cooked potatoes, salt, pepper and bacon.
Cook for 10 minutes, until the potatoes are golden and the bacon is crispy.
