Broccoli, cheddar and jalapeno frittata

3 cloves garlic, crushed
1 tbsp olive oil
1 small onion, diced
1 jalapeno pepper, finely chopped
200-250g chopped broccoli florets, pre-cooked
salt and black pepper
6 large eggs
100ml milk
100g of sharp cheddar, plus some extra for sprinkling
Preheat oven to 190C.
Heat one tbsp of olive oil in a medium frying pan. Sweat the garlic, jalapeno and onions.
Add the broccoli, salt and pepper and cook for a few minutes.
Whisk the eggs in a mixing bowl with the milk. Add the broccoli mixture and cheddar and stir to combine.
Pour the egg mixture into a well-greased quiche/pie dish and sprinkle a fine layer of cheddar across the top.
Cook for about 30mins.
