Butterbean stew

Packed full of iron, this stew makes a great comfort dish.
3 tbsp olive oil
1 onion, diced
3 carrots, diced
6 large tomatoes, chopped and sprinkled with a little salt
2 x 400g cans butter beans, drained
A few sprigs, rosemary for garnish
Harissa, to serve (can be found in most supermarkets)
In a large pan, heat the oil, onion and carrots.
Cook stirring, until soft but not coloured add in the garlic and cook for 1 minute, stirring.
Add the tomatoes and slowly cook for 15 minutes.
Add the beans, reduce the heat to the lowest simmer and warm through.
Taste, season, and then stir in the parsley.
Serve with harissa.
