Cheese and herb rarebits

A simple rarebit recipe bound to delight your guests.
150g low fat cream cheese
1 egg yolk
230g mature cheddar, finely grated
¼ bunch mixed fresh herbs of choice, finely chopped
1 baguette
5 plum tomatoes, sliced
1 pinch salt
1 pinch black pepper
Mix the cream cheese and the yolk of an egg in a bowl with some salt and pepper.
Add the grated cheddar and chopped herbs and mix thoroughly.
Slice the baguette into 3cm slices – cutting them at an angle.
Preheat a grill and grill the slices for about 2 minutes on each side, or until golden brown.
Place a slice of the tomato on each toasted baguette, and spread the rarebit mixture over the lightly toasted baguette slices.
Cook under a hot grill until golden brown and bubbling. This will take 2-4 minutes.
Serve straight-away.
